- 2 garlic cloves, smashed and lightly chopped
- 1 tablespoon olive oil
- 1 plum tomato, chopped
- 1 sprig fresh rosemary
- 2 cans cannellini beans, drained and rinsed
- 1/2 cup filtered water
- 1 teaspoon chopped fresh parsley
- Sea salt
- In a medium sized pot, cook garlic cloves in olive oil over medium-high heat for 1 minute.
- Add chopped tomato and rosemary. Cook for 2 minutes.
- Add cannellini beans and cook for 5 minutes, partially smashing beans with a wooden spoon.
- Remove the rosemary.
- Stir in the water and parsley. Season with salt.
- Optional: add a drizzle of olive oil when serving.
